The Ancient Tradition of Brewing Coffee

Brewing coffee in a cezve, also known as the Turkish method, is more than just mixing water and coffee. It is a true ritual that slows down time and requires patience. When you prepare this drink at home, it is important to know not only the technique but also the details that make the drink special. At Casablanca, we believe that properly selected beans and the roast profile are the foundation of this ritual.

What do you need for a perfect result?

Without high-quality ingredients, you cannot achieve the desired result. Casablanca recommends choosing finely ground coffee with a flour-like consistency. From our collection, you can select both bold, high-caffeine Robusta blends and aromatic, balanced roasts. The price for a 250-gram package typically ranges from 18 to 25 GEL, which is enough for over thirty cups of classic coffee.

Step-by-Step Brewing Instructions

  1. Maintain Proportions: Use a 1:10 ratio. For every 100 milliliters of cold water, you need about 10 grams (one heaping teaspoon) of finely ground coffee.
  2. Mixing: Add the coffee to the cezve first, then add the desired amount of water, and stir well until there are no clumps left. Do not stir during the brewing process, as this will disturb the foam forming on the surface.
  3. Heat: Place the cezve on the lowest heat setting. Slow brewing ensures the maximum release of aroma and adds body to the drink.
  4. Foam Control: As soon as the foam (known as kaimaki) begins to rise and moves toward the edges, remove the cezve from the heat immediately. Do not let it boil, as boiled coffee loses its aroma and acquires an unpleasant bitterness.
  5. Resting: Pour the coffee into a cup and let it sit for a minute or two. During this time, the grounds will settle, and the drink will reach the ideal temperature for serving.

Coffee Culture and Quality

Even in the climate of Batumi, where humidity is high, it is important to store your coffee beans in an airtight container, away from light. Casablanca's services, including professional grinding, will help you achieve the exact consistency needed to create the perfect 'cap' of foam in your cezve.
